Food Processing: Comparison of Different Food Classification Systems

The substitution of minimally processed food and culinary home preparations for ready-to-eat products is increasing worldwide, which is overlooked as a cause of concern. The technological developments and the rise in highly processed food availability have introduced the concept of ultra-processed food (UPF). Food classification systems based on processing are now a new basis for epidemiological research. Different results from these classifications might influence conclusions on the population’s consumption of UPF or its association with health outcomes. The aim of this study was to compare classification systems and to find out if their results are comparable when evaluating the extent of high/UPF on the overall diet. Portuguese data from the year 2000 was extracted from the DAFNE-AnemosSoft, and 556 food/beverages items were classified according to five systems. The contribution of UPF was calculated as a percentage of total available amount and discrepancy ranges used for comparisons. Results of UPF availability contributions were: NOVA 10.2%; UNC 15.2%; IFPRI 16.7%; IFIC 17.7%; IARC 47.4%. The highest discrepancy ranges were from alcoholic beverages (97.4%), milk/milk products (94.2%), sugar/sugar products (90.1%), added lipids (74.9%), and cereals/cereal products (71.3%). Inconsistencies among classifications were huge and the contribution from highly/UPF presented high discrepancies. Caution must be taken when comparing and interpreting such data.

1. Introduction

The replacement of minimally processed food and culinary home preparations for ready-to-eat products is increasing worldwide, which has been overlooked as a cause of concern [ 1 , 2 ]. These changes in the population’s dietary patterns have been accompanied by increases in the prevalence of obesity and other chronic diseases [ 3 ]. Many studies have linked the consumption of highly processed food with several chronic diseases such as cardiovascular disease, cancer, diabetes, metabolic syndrome, anxiety, asthma, autism, in addition to overweight and obesity [ 4 , 5 , 6 , 7 , 8 , 9 , 10 ].

Food technologies are commonly developed to preserve and keep food quality attributes [ 11 , 12 ]. Some positive impacts of food processing are, for example, the increase in shelf life and in nutrient bioavailability [ 13 ]. However, food processing can also have negative impacts, such as high content of artificial additives and loss of nutrients [ 14 ]. Similarly, the content of food in vitamins and minerals, sodium and fibers can be affected by industrial processing [ 15 ]. Furthermore, the industry also uses food technology to make food more palatable and with different textures, increasing its consumption [ 16 ].

The significance of the techniques and ingredients developed or created by food technology, on the nature of food and on the state of human health, was generally understated previously. Lately, technological developments and the rise in the availability of highly processed food have introduced the concept of ultra-processed food (UPF) to classify these kinds of products [ 17 ]. A new approach to industrial food processing and its impact on human health was developed. New food classification systems have been created, due to changes in the scope and purpose of food processing. According to our knowledge, as to the degree of processing, seven different food classification systems have been proposed by researchers worldwide [ 1 , 18 ].

The importance of these food classification systems is that they are a new basis for epidemiological and experimental research and, therefore, for official reports that include dietary guidelines, with the purpose of promoting and protecting health [ 1 , 19 ].

As far as we are concerned, only a few studies performed comparisons between different processing-based food classification systems using the same database [ 20 , 21 ]. One of these studies evaluated the classification of a list of 100 of the most consumed foods [ 21 ], the other assessed the contribution of UPF on the overall diet [ 20 ], and both used individual-based dietary measures.

Food frequency questionnaires, 24-h recalls, and food diaries are examples of direct methods of individual-based dietary assessments. Individual-level assessment measures food intake, while indirect methods refer to food supply or availability, usually estimated at the national or household level [ 22 ]. Household budget survey (HBS) data are particularly relevant once often they are the only tool available to assess food consumption and time trends of populations [ 23 , 24 ]. Since HBS data are freely available and their detailed information allows its use to assess UPF availability contribution, they were used in this study [ 3 ].

Due to the variety of food classification systems that consider the degree of food processing, a possible influence of their use in diverse dietary data was hypothesized. The aim of this study was then to compare the food grouping of the different classification systems and to find out if their results were comparable when evaluating the extent of highly/UPF on the overall diet using a database on household food and beverages availability.

2. Materials and Methods

2.1. food classification systems that consider the degree of processing.

Systematic reviews about this subject mentioned seven different food classification systems based on food processing [ 1 , 18 ]. The National Institute of Public Health (NIPH) of Mexico proposed the first classification system in 2007 [ 25 ]. In Europe, another one was developed in 2009 by the International Agency for Research on Cancer (IARC) researchers using methodology devised for the European Prospective Investigation into Cancer and Nutrition (EPIC) study [ 26 ]. Simultaneously, in Brazil, researchers from the Centre for Epidemiological Studies in Health and Nutrition at the School of Public Health, University of São Paulo focused on the role of industrial processing in nutrition and human health [ 27 ]. They created the NOVA classification system that was updated in 2015. This classification defines industrial food processing as methods used by the industry “to make raw foods less perishable, easier to prepare, consume or digest, or more palatable and enjoyable, or else to transform them into food products” [ 17 ]. The NOVA classification has been the most used worldwide [ 9 , 28 , 29 , 30 ]. In 2011, in Guatemala, a food classification system developed by Asfaw from the International Food Policy Research Institute (IFPRI) was made on previous work examining the contribution of processed food products to food supplies in lower-income countries [ 31 ]. In the United States of America (USA) in 2012, another food classification system based on processing level was developed by the International Food Information Council Foundation (IFIC), for determining the contribution of processed foods to nutrient intake in the US diet [ 32 ]. In line with the research carried out by Monteiro et al., in the USA in 2015, the University of North Carolina (UNC) developed another classification system, with modified category names and representative foods of the American diet [ 33 ]. Finally, in 2018, the Food Standard Australia New Zealand [ 34 ] also proposed to dichotomize foods and beverages into not processed or processed. However, this classification does not distinguish processed foods into their degree of processing, impairing measuring highly or UPF.

It was decided not to include systems that do not distinguish highly/ultra-processed food from processed food. Food classification systems with only local/regional applicability were also excluded. Therefore, two classifications were not considered: the FSANZ (Australia and New Zealand, 2018) [ 34 ], which classifies food only as unprocessed or processed, not distinguishing ultra or highly processed food; and the NIPH (Mexico, 2007) [ 25 ] that is focused on Mexican food products and traditional cuisine. Dietary data were then classified according to the 5 remaining systems: IARC (Europe), NOVA (Brazil), IFPRI (Guatemala), IFIC (USA), and UNC (USA), which main characteristics are summarized in Table 1 .

2.2. Dietary Data

The present study was performed by analysis of data obtained from the DAFNE-AnemosSoft ( http://dafne-anemos.hhf-greece.gr/ , accessed on 5 January 2022), where the DAFNE databank—developed in the context of the Data Food Networking (DAFNE) [ 35 ] initiative—is accessible. DAFNE databank is a simple and cost-effective tool to monitor food patterns and their socio-demographic determinants across European countries, Portugal included. The available data was compiled through the nationally representative and routinely undertaken Household Budget Surveys (HBS) and thus refers to the overall diet. DAFNE-AnemosSoft data results refer to the mean daily household availability of food and beverages for the overall population of each country. For the present analysis, Portuguese data from the year 2000 was extracted. Such data has previously been used to obtain UPF availability contribution [ 3 ], since the information available has enough detail (e.g., yogurts were detailed into natural, liquid, aromatized, with small pieces of cereals or fruits) [ 35 ].

The available data is expressed in grams or milliliters per person per day. It was decided to use the absolute quantity instead of converting into total energy once it allows including low or no-calorie foods, especially relevant for ultra-processed food products [ 36 ].

2.3. Data Analysis

The Portuguese extracted data from 556 food and beverages items were classified according to the five systems under analysis. All items were classified into one of four groups: 1—non-processed or unprocessed or minimally processed food; 2—basic or primary processed food; 3—moderately processed food; 4—highly or ultra-processed food (including the group “prepared food and meals” that was separate in the case of IFIC classification). Such association of items was performed for two independent researchers and a senior one that intervened when inconsistencies arose.

Based on DAFNE-AnemosSoft Portuguese data from year 2000, the total average amount of available food and beverages per day per person was 1620.18 g. For each classification system, the contribution of the different groups, highly/UPF in particular, was calculated as a percentage of this total amount, for the global availability and for each food and beverage category. The 11 categories and 39 subcategories used in data analysis and presentation, followed the DAFNE food classification system (DAFNE Food Classification System, 2005).

The percentage of food availability for each of the 11 categories of food and beverages was compared across the five classification systems using the discrepancy ranges (maximum value—minimum value) and the standard deviations for the average values obtained. For those categories with discrepancy ranges above 50%, the contributions observed for their subcategories were explored to enhance better comparison among classification systems.

3.1. Comparing the Different Grouping among Classification Systems

Table 2 highlights the similarities and differences between the 5 classifications under study. These classification systems differ from each other in the number of groups: IARC and IFPRI classify foods into 3 groups, NOVA and UNC into 4, and IFIC into five groups. In these classifications, group 1 is mainly “raw food”. Group 2, named “processed culinary ingredients” by NOVA, shows similarities to groups “primary processed foods” by IFPRI, and “basic processed food” by UNC. Group 3, named “processed foods” by NOVA, has some similarities to the group “moderately processed foods” by IARC and UNC and “mixtures of combined ingredients” by IFIC. For IFIC, the group “food for preservation”, was also considered in Group 3; although presented as the second group of IFIC classification, the examples refer to processed foods and not culinary ingredients. For NOVA, IARC, and UNC, this group contains foods that are minimally processed, but with the addition of salt, sugar, oils, and other culinary ingredients, in vacuum-package or under a controlled atmosphere. Group 4 is comprised of industrial formulations or foods prepared by the industry, packaged, ready for consumption and with a high content of salt, sugars and fat. For IFIC classification system these foods may contain preservatives used with the aim of promoting safety, flavour, and visual appeal. For these four classification systems, these foods are considered ready-to-eat foods. In the IFIC classification, for better comparison with the other classification systems, both groups (ready-to-eat and prepared meals) were joined in group 4 named highly or ultra-processed food. In this group, the five classification systems have similarities: IARC, IFPRI and UNC have named this group as highly processed foods, and NOVA as ultra-processed food.

Figure 1 presents the comparison among the percentage contribution obtained for each food and beverages category within the different degree of processing groups proposed by each classification system. In Figure 1 the differences and similarities among classification systems are pictorially highlighted, being clear that IFPRI, IFIC and UNC show a very similar configuration while NOVA and IARC present considerably different ones.

3.2. Comparing the Results for Highly/Ultra-Processed Food and Beverages among Classification Systems

For the global diet, the highly/ultra-processed availability contribution according to each one of the classification systems was: NOVA 10.2%, UNC 15.2%, IFPRI 16.7%, IFIC 17.7% and IARC 47.4% ( Table 3 ).

Table 3 shows the precise percentages of highly/UPF in each food and beverages category, by food classification system. The highest discrepancies in results were observed for five categories: Cereals and cereal products, Eggs, Milk, and milk products, Added lipids, Sugar and sugar products, and Alcoholic beverages. The categories with the most homogeneous results among the five classification systems were Meat, Potatoes, Fruits, and Non-alcoholic beverages.

In four of the five most discrepant food categories, it was observed that IARC presented the highest percentages, whereas for alcoholic beverages, only NOVA presented a value (2.6%) different from 100% ( Table 3 ). Details about these five categories are highlighted in Table 4 .

For the cereals and cereal products category, the higher resemblance is in the Rice subcategory. Bakery products also showed similar results. The higher discrepancies were observed in subcategories of bread and rolls, pasta and flour, where some systems classify 100% of the products and none of them. ( Table 4 )

Unanimity is observed in the Eggs subcategory classification, never considered as UPF. The yogurt subcategory is almost fully included as UPF for NOVA, IARC, and IFIC but not for IFPRI and UNC. The IARC system classifies 100% of cheeses and 98.7% of milk as highly processed, while the NOVA classifies only 8.3% of cheeses and 4.2% of milk as UPF. The other classification systems (IFPRI, UNC, IFIC) do not classify any type of cheese as highly/UPF. ( Table 4 )

For the category of Added lipids, it is visible that all classification systems consider the vegetable fat and margarine subcategory as UPF, except the IFIC, which classifies this subcategory as mixtures of combined ingredients. Relevant discrepancies were observed in the subcategories of lipids of animal origin, seed oils and olive oil. ( Table 4 )

The highest discrepancy in the category of Sugar and Sugar products was observed in the sugar subcategory, as only the IARC system classifies sugar as highly processed. All other classifications (NOVA, IFPRI, UNC, IFIC) classify this subcategory as basic/primary processed food or culinary ingredients. Sugar products contribution is similar and almost total in all classification systems but not in NOVA, with a much lower contribution (58.4%). ( Table 4 )

The discrepancy in the category of Alcoholic beverages is concentrated in the NOVA system, which does not classify Wine and Beer as UPF but instead as processed food, while all other classifications consider 100% of these two subcategories as highly/UPF. Unanimity was observed for Spirits, all considered as UPF in the five classification systems. ( Table 4 )

4. Discussion

Analyzing the different classification systems, some similarities were observed in the proposed grouping of foods. However, huge discrepancies were found when analyzing the results of the highly/UPF contribution by using the same dietary database to compare these classification systems. In this study, it was found that the classification system that presented the highest UPF contribution was the IARC (47.4%), followed by the IFIC (17.7%), IFPRI (16.7%) and UNC (15.2%), both with similar values, and NOVA (10.2%) with the lowest contribution value. A recent study, aiming to assess the impact of these classification systems on the association between UPF consumption and cardiometabolic health, compared UPF contribution results by using consumption data from a food frequency questionnaire applied to adult individuals, revealed that the highest consumption share was obtained with the IARC classification (45.9%) and the lowest with NOVA (7.9%) [ 20 ]. In agreement with our findings, these results underpin that NOVA, the most used classification, seems to underestimate the contribution of highly/UPF.

Unlike the present findings, a study that evaluated the robustness of food processing classification systems by classifying 100 foods consumed by children, verified that the NOVA system classified most foods as highly/ultra-processed compared to IFIC or UNC. The IFIC system classified less food as highly/ultra-processed, suggesting that this system underestimates the contributions of highly processed foods compared to NOVA and UNC [ 21 ]. Nevertheless, this study comprises only a specific age group applies the classification systems to a list of the most consumed foods, not analyzing the contribution for the overall diet, which might explain the disagreement.

Lack of consensus was particularly noticeable while classifying certain food categories and subcategories, namely, cereals and cereal products (for bread and rolls, flour and pasta), milk and milk products (for milk, cheese and yogurts), added lipids (for lipids of animal origin and seed oils), sugar and sugar products (for sugar), and alcoholic beverages (for wine and beer). It is relevant to highlight that the observed discrepancies are very much an all or nothing matter, meaning that the same subcategory of products might be or not be considered as highly/UPF depending on the classification system to be used. Bread is an example that well illustrates such divergences. For IARC bread is always considered highly/UPF because it is a ready-to-eat product (with no need of any domestic preparation). For NOVA and UNC, bread is only a highly/UPF if some specific ingredients (additives, sugar, fats and oils) are added on its production, otherwise, bread is considered as a processed food. For IFPRI and IFIC, bread is never classified as a highly/UPF once they only account for the extent of processing.

A recent paper that provides a qualitative critical overview of the processed-based food classification systems clearly argues for the existence of multiple and different criteria behind the different systems [ 37 ]. The identification of the various dimensions used by these systems in the conceptualization of processed foods—extent of change, nature of change, place of processing and purpose of processing—undoubtedly exposes the complexity of such classifications and helps to explain the discrepancies found in the present paper. As Sadler et al. stated, “Food processing and the degree of processing are interpreted in different ways. The classification systems address multiple characteristics of industrial foods as well as eating culture and hence the debates are multifaceted.” [ 37 ].

Comparing different dietary databases across diverse food processing classification systems is important to identify discrepancies that exist between them. It is necessary to be aware of such discrepancies when using this type of food classification to ensure the contribution of each food category is not under or overestimated. It is evident that further research is needed and that an effort on a consensual classification system would be of great public health relevance. Results from this study do not allow a clear recommendation on how to choose an appropriate classification system. However, if that was the case, NOVA would likely be chosen—not only for presenting the most conservative approach but also for allowing wider comparisons once it is the most used in the scientific literature.

Despite these discrepancies between classifications, some studies have linked the consumption of highly/ultra-processed foods to lower diet quality, linking processing and nutritional value. Nevertheless, discrepancies between food classification models and nutrient profiles (NP) are common. Labonté et al. [ 38 ] found discrepancies between models comparing the degree of strictness and agreement between nutrient profile systems to marketing restrictions of foods and beverages to children in Canada. Labonté et al. [ 38 ] considered the extent of food processing (NOVA system) is a novel and interesting avenue, although the categorization of foods according to this method in the original Pan American Health Organization (PAHO) model resulted in much higher discrepancies between team members than the categorization of foods in the other NP models [ 39 ]. Mora-Plazas et al. [ 40 ] compared two models, the PAHO model and the nutritional profile established by the Chilean food labelling and advertising legislation (Chilean model), and found that most packaged foods in Colombia exceeded critical nutrient thresholds using these NP models.

Apart from being limited by the use of specific data from one single country, there are some strengths in the present study that should be highlighted. First, this analysis used data that is freely available in DAFNE-AnemosSoft, a database that uses nationally representative samples of households. A limitation of this study concerns the use of a database from the year 2000, as since then there may have been changes in processing that may not be captured. Despite this, these data are comparable with other studies, such as that from Monteiro et al. [ 3 ], which used this same database and reported the same amount of UPF contribution that was found in the present study. Moreover, for Portugal 2000, the selected database provides detailed information for more than 500 food and beverages items, which allowed for a comprehensive and detailed analysis that has been performed by two independent researchers and a senior one when disagreement occurred. In addition, to the best of our knowledge, this study is the second performing comparison among classification systems on the degree of food processing by analyzing the share of UPF results in the overall diet, and the first that uses indirect consumption data from household availability to perform this evaluation. Furthermore, this study was the first to identify discrepancies among classification systems at the level of food and beverages categories and subcategories.

5. Conclusions

Inconsistencies among classifications are huge and thus, results of the contribution from highly/UPF presented high discrepancies. Lack of consensus was particularly noticeable while classifying cereals and cereal products (bread and rolls, flour, and pasta), milk and milk products (milk, cheese, and yogurts), added lipids (lipids of animal origin, and seed oils), sugar and sugar products (sugar), and alcoholic beverages (wine and beer).

The choice of the classification system to be used, clearly influences the conclusions to be taken about the contribution of highly/UPF in the overall diet. Caution must be taken when comparing results from different studies and on its association with health outcomes. An effort on a consensual classification system, based on clear criteria would be of great public health relevance.

Plant-based foods.

Plant-based foods encompass fruits, vegetables , grains, legumes, and nuts. They are rich sources of vitamins, minerals, fiber, and antioxidants.

Animal-Based Foods

Macronutrient Classification

How to Develop and Organize a Classification Essay

Classification is a method of developing an essay by arranging people, objects, or ideas with shared characteristics into particular classes or groups. After you have settled on a topic for a classification essay * and explored it through various prewriting strategies, you should be ready to attempt a first draft . Here is how to develop and organize a five-paragraph classification essay .

Introductory Paragraph

In your introduction , clearly identify your subject — in this case, the group you are classifying. If you have narrowed your subject in any way (for example, types of bad drivers, rock guitarists, or annoying moviegoers), make this clear from the start.

You may also want to provide some specific descriptive or informative details to attract the interest of your readers and suggest the purpose of the essay .

Finally, include a thesis sentence (usually at the end of the introduction) that briefly identifies the main types or approaches that you're about to examine. 

Intro Paragraph Example: Baseball Fans

Here's an example of a short but effective introductory paragraph to a classification essay:

It's a warm evening in July, and all across the country Americans are gathering to watch a game of professional baseball. Armed with hot dogs and cold drinks, they stroll to their seats, some in grand stadiums, others in cozy minor-league parks. But no matter where the game is played, you will find the same three types of baseball fan: the Party Rooter, the Sunshine Supporter, and the Diehard Fan.

Notice how this introduction creates certain expectations. The specific details provide a setting (a ballpark on "a warm evening in July") in which we expect to see the various fans described. In addition, the labels assigned to these fans (the Party Rooter , the Sunshine Supporter , and the Diehard Fan ) lead us to expect descriptions of each type in the order they're given. A good writer will go on to fulfill these expectations in the body of the essay.

Body Paragraphs

Begin each body paragraph with a topic sentence that identifies a particular type of approach. Then  illustrate each type with specific details.

Arrange your body paragraphs in whatever order strikes you as clear and logical — say, from the least effective approach to the most effective, or from the most common type to the least familiar (or the other way around). Just make sure that the order of your body paragraphs matches the arrangement promised in your thesis sentence.

Body Paragraphs Example: Types of Fans

Here, in the body of the essay on baseball fans, you can see that the writer has fulfilled the expectations set up in the introduction. (In each body paragraph, the topic sentence is in italics.)

The Party Rooter goes to games for the hot dogs, the gimmicks, the giveaways, and the companionship; he's not really that interested in the ballgame itself. The Party Rooter is the sort of fan who shows up on Buck-a-Brew Night, often with a gang of fellow partiers. He cracks jokes, hurls peanuts at the team mascot, applauds the exploding scoreboard, blasts an electronic horn whenever he pleases—and occasionally nudges a companion and asks, "Hey, who's winning?" The Party Rooter often wanders out of the park in the sixth or seventh inning to continue his celebrations in the car on the way home. The Sunshine Supporter, usually a more common type than the Party Rooter, goes to the park to cheer on a winning team and bask in its glory. When the home side is on a winning streak and still in contention for a playoff spot, the stadium will be packed with this sort of fan. As long as her team is winning, the Sunshine Supporter will be roaring at every play, waving her pennant and shouting out the names of her heroes. However, as the name implies, the Sunshine Supporter is a fickle fan, and her cheers quickly turn to boos when a hero strikes out or drops a line drive. She will stay around until the end of the game to celebrate a victory, but should her team fall a few runs behind, she's likely to slip out to the parking lot during the seventh-inning stretch.​ Diehard Fans are also strong supporters of the local team, but they go to the park to watch good baseball, not just to root for a winner.  More attentive to the game than other fans, Diehards will study the stance of a power hitter, note the finesse of a quick fielder, and anticipate the strategy of a pitcher who has fallen behind in the count. While the Party Rooter is chugging a beer or dropping wisecracks, Diehards may be filling in a scorecard or commenting on a player's RBI tally over the past few months. And when a Sunshine Supporter boos an opposing player for tagging out a local hero, Diehards may be quietly applauding the expert moves of this "enemy" infielder. No matter what the score is, Diehard Fans remain in their seats until the last batter is out, and they may still be talking about the game long after it's over.​

Comparisons Ensure Cohesion

Notice how the writer uses comparisons to ensure cohesion in the body of the essay. The topic sentence in both the second and third paragraphs refers to the preceding paragraph. Likewise, in the third body paragraph, the writer draws explicit contrasts between the Diehards and the other two types of baseball fans.

Such comparisons not only provide smooth transitions from one paragraph to the next but also reveal the sympathies of the writer. He begins with the type of fan he likes the least and ends with the one he most admires. We now expect the writer to justify his attitudes in the conclusion.

Concluding Paragraph

The concluding paragraph gives you an opportunity to draw together the various types and approaches you have been examining in the body of the essay. You may choose to offer a final brief comment on each one, summarizing its value or its limitations. Or you may want to recommend one approach over the others and explain why. In any case, make sure that your conclusion clearly emphasizes the purpose of your classification.

Concluding Paragraph: Only the Diehard Fans Remain

In the concluding paragraph to "Baseball Fans," consider whether the author has been successful in his effort to tie his observations together.

Professional baseball would have trouble surviving without all three types of fans. The Party Rooters provide much of the money that owners need to hire talented players. The Sunshine Supporters bring a stadium to life and help boost the morale of the home team. But only the Diehard Fans maintain their support all season long, year in and year out. By late September in most ballparks, enduring chilly winds, rain delays, and sometimes humiliating losses, only the Diehards remain.

Connecting the Conclusion to the Introduction

Notice how the writer hooks his conclusion back to the introduction by contrasting the chilly night in September with the warm evening in July. Connections such as this help to unify an essay and give it a sense of completeness.

As you develop and organize your draft , experiment with various strategies, but keep this basic format in mind: an introduction that identifies your subject and the different types of approaches; three (or more) body paragraphs that rely on specific details to describe or illustrate the types; and a conclusion that draws your points together and makes the overall purpose of the classification clear.

This paper is the first to make a systematic review and assessment of the literature that attempts methodically to incorporate food processing into classification of diets. The review identified 1276 papers, of which 110 were screened and 21 studied, derived from five classification systems. This paper analyses and assesses the five systems, one of which has been devised and developed by a research team that includes co-authors of this paper. The quality of the five systems is assessed and scored according to how specific, coherent, clear, comprehensive and workable they are. Their relevance to food, nutrition and health, and their use in various settings, is described. The paper shows that the significance of industrial food processing in shaping global food systems and supplies and thus dietary patterns worldwide, and its role in the pandemic of overweight and obesity, remains overlooked and underestimated. Once food processing is systematically incorporated into food classifications, they will be more useful in assessing and monitoring dietary patterns. Food classification systems that emphasize industrial food processing, and that define and distinguish relevant different types of processing, will improve understanding of how to prevent and control overweight, obesity and related chronic non-communicable diseases, and also malnutrition. They will also be a firmer basis for rational policies and effective actions designed to protect and improve public health at all levels from global to local.

Classification of Healthy Food: Healthy Eating Habits Essay

Classification of healthy food is the categorizing of foods that are safe for human consumption. It is important to encourage healthy eating habits and choices, especially among children. Taking strict measures in protecting yourself from bad eating habits can help prevent some common diseases. Once this happens one can say they are living a good life. (Yadav)

Carbohydrates are foods that contain fats and sugars. They are a form of energy in the body. Cereals, bread, pastas, crackers, and rice are in this class. Grains supply provides food energy from starch and carbohydrates. Bread that is manufactured using polished ingredients is not advised but rather whole grains. These whole grains are contained in brown oatmeal. Tubers including Irish potatoes, sweet potatoes, and Jerusalem artichoke are also in this category. Legumes such as navy beans, peas, peanuts, and lentils are also carbohydrates. Some nuts also contain starch including acorns, cocoanuts, and dry chestnuts. (Agriculture and Consumer Protection)

Proteins are nitrogenous foods in that they hold the right amount of protein required in the body. Since the body requires nitrogen these foods are very important. Regularly people get proteins from animal sources like birds, fish, and domesticated animals. Proteins assist in developing the body framework, they provide resources to restore body waste as well as helping the body with important ingredients that give it the oily texture. They are very important in providing energy for the body muscles. The main sources of proteins include meat of all types like beef, mutton, lean pork, chicken, duck, and mostly all lean meat from many animals and birds. All types of fish, Legumes such as dried beans and peas. Dairy products like milk, cottage cheese, and cream. Some nuts also like almonds, Brazil nuts, filberts, hickory nuts, and pecans all contain protein. (Dolson)

Fats and oils are other categories of food. These are very concentrated foods such that pure oil has 4,220 calories which are high compared to other classes of food. These foods are supposed to be eaten in fewer quantities because of the number of calories they contain. They are soft fats whether it is cold or warm they remain fine foods. The source of oil and fat is carbon that is why they provide heat and energy. They help the body fatten very fast since they are too fatty. People in warmer climates should eat less of these foods to protect their skin. Dairy products like rich cheese, butter, and cream are fats. Meat that has been fattened, some fish like herring and shad as well as some legumes like Soya beans are all kinds of fats and oils. Most nuts and cotton seeds, olives and corn furnish contain oils. Fruits are very good foods and when eaten well they keep the bloodstream clean. Most fruits have constituents that help cleanse the blood. They contain a lot of potassium, calcium, and salts which keep the body healthy. Some fruits like acid fruits help in cooling the body and therefore people should eat them often. Sweet fruits are also good for nourishing the body and protecting from diseases. Examples of fruits include Apples, lemons, oranges, peaches, pears, strawberries, apricots, avocadoes, blackberries, cherries, cranberries, currants, and gooseberries. (Yadav)

Vegetables are good for the body since they contain minerals and vitamins. It is essential to consume a wide range of vegetables because different vegetables contain different elements. They are low in fats and calories but they should not be overcooked since these fats can be added in the process. They also help keep the bloodstream clear and they are very healthy foods. Some vegetable should be eaten raw and not cooked to maintain the vitamins and minerals. Carrots, cabbage, cucumber, egg plant, lettuce and tomatoes are some of the vegetables. (Yadav)

Healthy eating is very important for a healthy body. People should avoid unhealthy eating habits in order to ensure that they avoid many common diseases thus maintain healthy lifestyle. All the foods that contain fats and oils should be taken in low quantities whenever necessary. This will ensure that one feels fit and avoid unnecessary disorders.

Eating is a mandatory process that people must perform in order to sustain life. There are numerous choices to choose from when it comes to food ("Adjusting the Servings"). There are fruits, vegetables, dairy products, meat, fish, and many others. Food can be combined with various amounts of other foods and there are a profuse number of ways to cook them ("Adjusting the Servings"). In general, food can be broken down into six categories. This includes: the bread, cereal, rice, and pasta group; fruit group; vegetable group; milk, yogurt, and cheese group or dairy group; meat, poultry, fish, dry beans, eggs, and nuts group; fats, oils, and sweets group.

The bread, cereal, rice, and pasta group contain foods such as crackers, spaghetti, pancakes, and other products. A person should eat 6-11 servings everyday. Foods made from cereal grains provide starches and fiber. Starches are an excellent energy source. Enriched breads and cereals are a source of iron. Iron is a part of hemoglobin which supplies oxygen to body cells. Eating six to 11 servings each day will provide important nutrients and help meet energy requirements ("Food Pyramid Information").

The next class is the fruit group. This can be broken down further into different kinds of fruits. This includes: tropical or exotic, citrus, tree, olives, fruit-vegetables, berries, and melons. Tropical or exotic fruits can be classified further still as bananas, one stoned, segmented, 2-10 seeded, or more than 15 seeded. A person should consume 2- 4 servings each day. Fruits are a good source of potassium, as well as vitamins A and C. Potassium works in combination with sodium to contract and expand muscles, maintain water balance between cells, and transmit nerve impulses. Vitamin C helps form the collagen that gives structure to bones, cartilage, and muscles. The variety of colors, shapes and flavors found in fruits can add nutritional value to any meal (Thefruitpages.com).

The third category is the vegetable group. Examples of vegetables are broccoli, lettuce, corn, potatoes, pumpkins, and many more. A person should eat 3- 5 servings daily. Vegetables are relatively low in calories and fat, and provide many different vitamins and minerals. These low-fat, fiber-rich foods are good sources of vitamin A, vitamin C, and folic acid. Some vegetables contain magnesium, potassium and iron. Vitamin A works to provide healthy skin, hair and mucous membranes. Proper bone growth and tooth development depends on vitamin A. It also assists with night vision or the ability of the eye to adapt to darkness. Vegetables are rich in nutritional value, which are similar to fruits ("Food Pyramid Information").

The next group is the milk, yogurt, and cheese group. This is also referred to as the dairy group. This class includes foods such as ice cream, chocolate milk, cream cheese, or low fat yogurt. A person should ingest 2-3 servings everyday. It is important to eat milk products daily to provide needed calcium, B vitamins and protein. Milk, yogurt and cheese are the best sources of calcium. It helps to build a strong bone structure and not enough calcium can lead to Osteoporosis. Osteoporosis is the thinning of the bone due to loss of calcium and other minerals, which makes bones frail and easy to break. Two to three servings from the milk, yogurt and cheese group are needed by everyone

Your next essay assignment is the  classification . In this essay, you will categorize information into groups. For instance, you could categorize different types of television programs (comedies, dramas, reality shows), types of popular autos (sports cars, compact cars, station wagons) or any topic you could break down into groups.

Remember how in the comparison/contrast essay you looked at the similarities between two items: Coca Cola vs. Pepsi, let’s say. You then developed that essay by looking at basic concepts: color, taste, cost, for instance. In  classification  you will have one major topic (Soda pop) and will break that topic into three or four categories: colas, fruit sodas, sparkling sodas.

It is important to have some kind of connection between the categories- they have to have a relationship. Here are some important points to consider when choosing a topic and its categories:

  • Pick a topic that is workable. Don’t try to classify all the types of music, for instance. There are dozens, really. Narrow your topic down- types of modern popular music, or types of classical music. You can write an essay about types of students at Clinton Community College, but in reality there are many, many different types. What you might want to say is “the most common types of students” and then focus on three or four categories (a good number).
  • Make sure your categories are balanced. If your talking about types of students and you categorize them into three categories: shy students, outgoing students and rich students, what kind of problem have you created? A rich student might be shy or he/she might be outgoing. Two categories deal with personality, the third with financial status. They all have to have a connection- all personality or all financial status.
  • Categories should be generalizations- support should be specific. Popular music categories: country; alternative; the Rolling Stones. The first two are general categories in which you can find many examples. The third is a specific that doesn’t really have examples. The Rolling Stones are one example of classic rock, let’s say.
  • Try not to classify a topic with two categories. That can lead to a comparison/contrast essay. Sure, there are some that work: two main types of trees in the Adirondack forest: deciduous and coniferous. But for the most part, look for ways to break into at least three categories (but no more than four): leafy trees, needle trees, shrubby trees, perhaps.
  • Have a solid introduction that establishes  classification  (and may include the categories) and a brief conclusion that expresses what the reader should think about now that he/she recognizes these groups.

In the comparison/contrast essay, you wrote about the similarities and difference between lake trout and Atlantic landlocked salmon, let’s say. You could write a related  classification  essay by putting Lake Champlain fish into types: predator fish, prey fish, scavengers (based on food consumption), or sports fish, pan fish, nuisance fish (based on angler preferences). Trout and salmon, then would be good examples for the predator or the sports fish categories, as would bass, pike and walleyes. Yellow perch, rock bass, sun fish might all be fit into the prey category while suckers and bullhead would be considered scavengers.

Pick a topic you’re comfortable with, something you have an interest and background in. If you can’t come up with examples for each category, then you probably haven’t created good categories. The library houses thousands of books, which would be hard to browse if they were thrown haphazardly on shelves. Instead, all the fiction is organized alphabetically by author on the first floor, while the second floor houses all the non-fiction organized by subject. This allows a student to find the book they are looking for without searching every shelf.

Categories: Since a classification essay breaks a topic or subject into categories, it is important for each category to be distinct from one another. The classification essay opens with an introductory paragraph that introduces the broader topic. The thesis should then explain how that topic is divided into subgroups and why. Take the following introductory paragraph, for example:

When people think of New York, they often think of only New York City. But New York is actually a diverse state with a full range of activities to do, sights to see, and cultures to explore. In order to better understand the diversity of New York state, it is helpful to break it into these five separate regions: Long Island, New York City, Western New York, Central New York, and Northern New York.

The thesis explains not only the category and subcategory but also the rationale for breaking it into those categories. Through this classification essay, the writer hopes to show his or her readers a different way of considering the state.

Each body paragraph of a classification essay is dedicated to fully illustrating each of the subcategories. In the previous example, then, each region of New York would have its own paragraph.

The conclusion should bring all the categories and subcategories back together again to show the reader the big picture. In the previous example, the conclusion might explain how the various sights and activities of each region of New York add to its diversity and complexity.

To avoid settling for an overly simplistic classification, make sure you break down any given topic at least three different ways. This will help you think outside the box and perhaps even learn something entirely new about a subject.

In the worst conditions you can imagine — after hurricanes, earthquakes, bombs and gunfire — the best of humanity shows up. Not once or twice but always.

The seven people killed on a World Central Kitchen mission in Gaza on Monday were the best of humanity. They are not faceless or nameless. They are not generic aid workers or collateral damage in war.

Saifeddin Issam Ayad Abutaha, John Chapman, Jacob Flickinger, Zomi Frankcom, James Henderson, James Kirby and Damian Sobol risked everything for the most fundamentally human activity: to share our food with others.

These are people I served alongside in Ukraine, Turkey, Morocco, the Bahamas, Indonesia, Mexico, Gaza and Israel. They were far more than heroes.

Their work was based on the simple belief that food is a universal human right. It is not conditional on being good or bad, rich or poor, left or right. We do not ask what religion you belong to. We just ask how many meals you need.

From Day 1, we have fed Israelis as well as Palestinians. Across Israel, we have served more than 1.75 million hot meals. We have fed families displaced by Hezbollah rockets in the north. We have fed grieving families from the south. We delivered meals to the hospitals where hostages were reunited with their families. We have called consistently, repeatedly and passionately for the release of all the hostages.

All the while, we have communicated extensively with Israeli military and civilian officials. At the same time, we have worked closely with community leaders in Gaza, as well as Arab nations in the region. There is no way to bring a ship full of food to Gaza without doing so.

That’s how we served more than 43 million meals in Gaza, preparing hot food in 68 community kitchens where Palestinians are feeding Palestinians.

We know Israelis. Israelis, in their heart of hearts, know that food is not a weapon of war.

Israel is better than the way this war is being waged. It is better than blocking food and medicine to civilians. It is better than killing aid workers who had coordinated their movements with the Israel Defense Forces.

The Israeli government needs to open more land routes for food and medicine today. It needs to stop killing civilians and aid workers today. It needs to start the long journey to peace today.

In the worst conditions, after the worst terrorist attack in its history, it’s time for the best of Israel to show up. You cannot save the hostages by bombing every building in Gaza. You cannot win this war by starving an entire population.

We welcome the government’s promise of an investigation into how and why members of our World Central Kitchen family were killed. That investigation needs to start at the top, not just the bottom.

Prime Minister Benjamin Netanyahu has said of the Israeli killings of our team, “It happens in war.” It was a direct attack on clearly marked vehicles whose movements were known by the Israel Defense Forces.

It was also the direct result of a policy that squeezed humanitarian aid to desperate levels. Our team was en route from a delivery of almost 400 tons of aid by sea — our second shipment, funded by the United Arab Emirates, supported by Cyprus and with clearance from the Israel Defense Forces.

The team members put their lives at risk precisely because this food aid is so rare and desperately needed. According to the Integrated Food Security Phase Classification global initiative, half the population of Gaza — 1.1. million people — faces the imminent risk of famine. The team would not have made the journey if there were enough food, traveling by truck across land, to feed the people of Gaza.

The peoples of the Mediterranean and Middle East, regardless of ethnicity and religion, share a culture that values food as a powerful statement of humanity and hospitality — of our shared hope for a better tomorrow.

There’s a reason, at this special time of year, Christians make Easter eggs, Muslims eat an egg at iftar dinners and an egg sits on the Seder plate. This symbol of life and hope reborn in spring extends across religions and cultures.

I have been a stranger at Seder dinners. I have heard the ancient Passover stories about being a stranger in the land of Egypt, the commandment to remember — with a feast before you — that the children of Israel were once slaves.

It is not a sign of weakness to feed strangers; it is a sign of strength. The people of Israel need to remember, at this darkest hour, what strength truly looks like.
