How to Stop Hating Your Least Favorite Food

I can’t stand cucumbers, but I’m ready to change if I can.

Cucumbers are my nemesis. I want to fight every food in the melon family and many melon-adjacent foods, but melons avoid my primary disdain because they usually take their rightful place as easily avoidable fruit-salad filler. Cucumbers, though. Cucumbers. They hide in all kinds of things that otherwise seem safe to put in my mouth: sushi rolls, salads, sandwiches, the takeout “lunch bowls” that restaurants near my office sell for $14.

As far as I can remember, I’ve never liked cucumbers, mostly because they taste bad. If they’re present, they’re the first thing I notice, and it’s like someone has sprayed a middle schooler’s eau de toilette from 2002 on my food. Most other people appear to live on slightly different planes of cucumber reality from mine, which I’ve learned over several decades of watching people somehow eat them voluntarily.

My cuke avoidance is what’s known as a food aversion, and although aversions are widespread in the United States, hating a food that others love is socially coded as fussy or unsophisticated. People with many or severe aversions often experience isolating anxiety or social opprobrium. For people like me, it’s more commonly just a nuisance that might inspire an occasional eye roll.

Still, my distaste for such an innocuous food feels vaguely shameful, and after much deliberation, I’m ready to switch sides. I’m ready to make myself like cucumbers. Getting there is unlikely to make any huge improvement in my life, but at the very least, I’d like to reroute my energy to a more interesting source of shame. And the good news, according to researchers, is that most people can reset their neural pathways to one day enjoy—or at least tolerate—a nice gazpacho.

Before you can solve a problem, you have to understand what it is: Why is it cucumbers for me, and broccoli or oysters for some other people? There’s no neat explanation, according to Paul Rozin, a psychology professor at the University of Pennsylvania. “The great majority of people have a fair number of things they don’t like,” he says. There is evidence of genetic differences that make some people more sensitive to certain chemicals in food, but those people might actually prefer the taste of those chemicals. “Sensitivity doesn’t necessarily mean a person will be averse to something,” Rozin explains.

There is one type of aversion that scientists understand pretty well, though, according to Anthony Sclafani, a professor at Brooklyn College who studies the neurobiology of taste: If you eat a novel food and then experience nausea or vomiting, your brain is primed to blame that food. That’s true even if you know, on an intellectual level, that the food isn’t at fault. “We get sick to our stomach and automatically develop an aversion. It’s just hardwired,” Sclafani says. Because of this, people with cancer are often advised to “scapegoat” particular foods during chemotherapy: To avoid creating an association between the treatment’s nauseous side effects and a patient’s normal diet over time, the brain can be steered toward assigning those effects to novel foods instead.

I’ve never had a traumatic barf experience with cucumbers, so my aversion is probably just an innate dislike. And the culprit behind my long-term cuke hatred might be in the vegetable’s smell, more specifically than its taste. “What we call ‘taste’ is really ‘flavor,’ which is a mixture of taste, smell, and texture,” Sclafani says. People lose olfactory sensitivity as they age, which is a big reason that many people seem to outgrow childhood aversions: A food that might have been overwhelming to a kid will read as more mellow to an adult. I’m in my 30s, so there’s a decent chance that, were I to give cucumbers a fair shake, I’d hate them a lot less than my childhood memories have led me to believe.

Childhood can be key to later-in-life food preferences in a lot of ways. Before a baby is even born, what a mother eats can influence what her infant will like because diet affects amniotic fluid, and that influence continues in the months after birth through lactation. “If an Italian mother eats a lot of garlic, the milk has a garlic flavor to it,” says Sclafani. “Her infant will be more accepting of garlic than the infant of a mother who doesn’t eat garlic.” For mothers who don’t breastfeed, varying an infant’s formula flavor can help prevent later pickiness.

The tie between early life and food preference goes beyond issues of exposure, says Ellyn Satter, a dietitian and therapist who studies and treats picky eating in both children and adults. In childhood, people acquire many of their emotional difficulties with eating, so understanding that emotional tie is key to both overcoming aversions and raising children with positive relationships to food. “In our culture, it’s all about what you ‘should’ be eating, not about how you feel about it or your enjoyment of food,” says Satter. “Children are coerced to eat certain amounts of certain types of food, which turns them off to those foods.”

Instead, she says, parents should be patient with their kids and let them come to new foods naturally. “Picky kids will desensitize themselves, and they do that by seeing [a food] on the table and watching their parents eating and enjoying.”

With adults, the process is pretty similar, according to all the experts I spoke to. Food aversions can generally be overcome with gentle, steady exposure , which can start with something as simple as buying the offending food and allowing it to be in the house. Satter says that adults should also feel free to do something kids do instinctually: Put a food in their mouth and then take it out, without forcing themselves to swallow. That allows a person to grow accustomed to a taste or texture without necessarily associating it with a negative physical reaction, since swallowing something you don’t enjoy can be difficult and unpleasant.

I should probably just go buy a cucumber instead of bothering experts and writing a thousand words about it. I even have some spicy hummus in my fridge, and from what I’ve gleaned based on how other people eat cucumbers, they might pair well together. A journey of a thousand Israeli salads begins with a single step.

That said, people with food aversions like mine often feel worse about them than is necessary, and even extremely picky eaters are unlikely to be doing themselves any physical harm. “Often there’s nutritional concern where there shouldn’t be,” says Rozin. “The only time they get in trouble is if they’re in someone’s house, where it’s considered sort of rude just not to like things.”

Satter agrees that I might be better off if I just forgave myself for disliking certain things instead of trying to push through them. “If people can unhook themselves from the ‘shoulds’ and instead think about eating foods they enjoy, our research has shown that in the long run, they’re healthier,” she says.

Okumura discusses simple, healthy cooking in the Japanese tradition. While many tend to include as many vegetables as possible in their dishes for “health,” Okumura writes that just a few vegetables are necessary to make healthy but delicious dishes. With the help of Japanese pantry staples like miso and soy sauce, she makes a variety of traditional Japanese side dishes. She shows the wonders of food, even when executed in its simplest form. 

“I make pesto out of kale stems, toast the squash seeds for salad and repurpose my leftovers into brand new dishes. I love cooking because it’s an exercise in play. Cooking is forgiving in improvisation, and it can often surprise you. Though I have never been fat, I can understand why some people get that way. There are times when I think there is not enough choice in the world when it comes to food, and I feel like I have eaten every type of meal at least 100 times–and then there are times when there is so much good stuff on offer that I simply need to try them all at one time. There are times when I walk around supermarkets and see sliced salmon for sandwiches, quarter pounders with cheese, honey glazed ribs, marshmallow covered pancakes, and toffee pavlova, and I want it all right now. Here are my favourite foods and why I love them so. Toffee pavlovas are brilliant when still frozen

The toffee pavlova is already a brilliant idea because you have meringue on the outside that is crunchy and sweet, and you then have the cream on the inside, which is fluffy and fresh, and on the top, you have soft caramel. They are good as a fresh treat, but are great whilst partially frozen because the cream inside turns to ice cream.

Self-made pizzas using store bought pizzas

Buy a cheap deep-pan pizza from the frozen section at your local store. Buy some tomato paste and cream, and mix it to make a paste. Add a little seasoning to the paste and microwave it to make it warm. Stir it well and smear it on your pizza. Now add grated cheese and toppings. The once-mediocre store-bought pizza is now a homemade success.

Mixed sushi packets

There are mixed sushi packets you can buy in your local supermarket. They are not cheap, but they are also not as expensive as going to a sushi restaurant or bar. The great thing is that they usually come with a little sauce that you can use on them. Scoffing them down one at a time usually provides a mouthful of deliciousness. Even the vegetarian versions are delicious.

Frozen mixed fruits with double cream

There are boxes of ready-picked fruits you can buy. They are usually comprised of pickable cherries and berries. Wait until they are mostly defrosted and drain off the juices to drink on their own. Then, mix some double cream into the box of fruits and chow down whilst it is still cold. The cream will stick to the fruits because the cold makes it harden up and attach itself to the fruit.

Chinese and honey glazed ribs

These are just great to eat no matter how you make them. If you are on a diet, then throw them in a pan, add a little water and boil them because most of the sauce and grease will stay in the pan. If you are already healthy, then fry or oven bake them. You can even put them on a barbeque if you microwave away a little of their rawness first.

Sliced salmon that is eaten alone or on sandwiches

There is nothing finer than salmon slices so long as it is responsibly farmed, and it is even better if it is on offer. The slices can be eaten alone or on a sandwich. They are also fun to eat for lunch on top of a baked potato with added feta cheese.

There are so many great foods that it is tough to pick a favourite, but as a favourite snack, there is nothing better than tuna chunks in sunflower oil that has been poured into a bowl of mixed salad and then the salad has been tossed using the tuna and oil as dressing. It is a taste that never gets old and can be eaten at any time of the day.

Today’s pop stars are cramming songs with so much biography they need footnotes – and they’re in danger of alienating all but their hardcore fans

W hen Taylor Swift released Reputation in 2017, she self-published an accompanying magazine while avoiding interviews. “When this album comes out, gossip blogs will scour the lyrics for the men they can attribute to each song, as if the inspiration for music is as simple and basic as a paternity test,” she wrote in an essay. The sentiment oozed with contempt for playing dot-to-dot with her lyrics – even though, from her debut album to Reputation’s predecessor 1989, Swift left clues in her liner notes that clearly indicated whom certain songs were about.

Seven years on, and Swift’s new album, The Tortured Poets Department, couldn’t be more transparent about its subjects – typewriters and tattoos lighting a path to the 1975’s Matty Healy, whom she had a fling with last spring; Hampstead Heath and “longsuffering propriety” referring to actor Joe Alwyn, who she dated for six years.

In case you didn’t clock them from ambient exposure to the mass coverage of the past year in her life, there are hundreds of articles online handily “decoding” the carefully chosen references; bonus song The Black Dog mentions Pennsylvania pop-punk band the Starting Line, and one easy Google search reveals that the 1975 covered them live last year. Maybe Swift was going for the highest-profile humiliation of her exes possible; maybe it’s an admission of defeat against a media that will pick the bones clean of anything she does – or a naked attempt to harness the exposure guaranteed by that kind of coverage.

The latter seems most likely given that gossip is pop’s driving engine right now. From Swift to Ariana Grande’s divorce album Eternal Sunshine , Sabrina Carpenter, Miley Cyrus and Olivia Rodrigo, the highest-profile releases are laden with popcorn-chewing subtext – or it’s the subtext that propels them to that level of exposure.

The lurid appeal of famous people shit-talking one another is evident – and it’s long been an art form in rap, now in the midst of a purple patch for beef – but whether it makes for lasting pop is another matter. Swift helped propagate the notion that pop achieves universality through specificity, though there’s a point at which specificity begins to strangle the life out of songwriting; where proper nouns (“Charlie Puth”) stand in for being able to contour emotional arcs and elegant portrayals of relationship dynamics that listeners might see in their own lives. Rather than enduring landmarks in an artist’s catalogue, these records can feel like expansions of personal lore more akin to how the Marvel Cinematic Universe operates: a layering of references and gestures over meaning and depth; a patently obvious breadcrumb trail that harnesses the public into promoting a generation of superstars, who can now comfortably evade the press.

The move away from physical music and bespoke music media to streaming and social media seems key to this shift. New music is now just another thing in your feed; it has had to use the eye-catching clickbait of its competitors to keep pace. “Why do you care so much whose dick I ride?” Grande asked on Yes, And?, the lead single from Eternal Sunshine – rebuking fans and baiting them at the same time. It’s also down to a generation of particularly young female pop stars becoming the writers of their own work and so documenting their own lives, something that was much less common at the turn of the 2010s. That is a wholly positive shift that has produced a ton of great work. But even the most elegant songwriters find themselves caught in an age when veracity is considered the ultimate in authenticity, and they are subject to prurient online sleuthing that treats songwriting as a series of clues to piece together in pursuit of some ultimate “truth”.

Rodrigo never discussed the explicit background to her masterful debut single Drivers License, but fans quickly assumed that it concerned a supposed love triangle between three young Disney Channel stars. She seemed burned by the invasive coverage; so too was Joshua Bassett, the alleged male party, who ended up hospitalised as a result of the stress and whose career has never recovered. Carpenter, the rumoured “other woman”, wrote the excellently nonchalant Because I Liked a Boy after she was hounded over the allegations (“Now I’m a homewrecker, I’m a slut … Tell me who I am ’cos I don’t have a choice”). She then seemed to become weaponised in a rumoured rift between Rodrigo and Swift when the latter invited Carpenter to support the Eras tour (Rodrigo’s comeback single Vampire was also assumed to be about Swift).

For all that subtext, Carpenter’s new single, Espresso, is a mercifully frothy diversion from the discourse: breezy disco about being so hot you keep boys up at night. It’s rising up the UK Top 10, and Carpenter looks set to become the next big pop star – a waning archetype, with few breaking through since Rodrigo in 2021. You wonder if the difficulty in developing new stars comes down to an absence of readymade lore, which Carpenter has. Now 24, she is only new to the general public. She started on Disney at 16 and has released five albums, and left Disney’s own Hollywood Records, which caters to a niche teen audience, to sign to Island for 2022’s Emails I Can’t Send – her first album after intrigue into her personal life flourished.

It leaves pop in a tricky spot. Too much gossip and you date your work; too little and fans lose interest. Last year, Ellie Goulding toted her fifth album, Higher Than Heaven, as her “least personal record yet” – and it was also her least successful, bombing out of the UK charts after a fortnight. The opening track to Justin Timberlake’s new album, Everything I Thought It Was teased introspection in the wake of his post-Britney reckoning, but only offered up vacant libidinous disco pop: it also dropped out of the Top 100 after two weeks. Kacey Musgraves’ latest album, Deeper Well, frustratingly traded her old lyrical specificity for therapy-smoothed platitudes. Dua Lipa’s forthcoming album has been distinguished by a remarkably blank press campaign: good on her for not spilling her guts for headlines, but her vapid interviews and three totally impersonal singles have left fans nonplussed about Radical Optimism. “The self is the only subject,” Neil Tennant of the Pet Shop Boys – one of pop’s great storytellers – withered at a Guardian Live event this week while promoting the band’s new album, Nonetheless, which instead imagines the inner lives of dancer Rudolf Nureyev, spy George Blake and Oscar Wilde.

Today’s self-obsessed pop, which needs its own footnotes, may well alienate the passing fan who just wants something to listen to in the car. Perhaps that’s why charts are seeing a resurgence of rustic broad-church emoting from the likes of Benson Boone, Teddy Swims, Hozier and Noah Kahan; and why Natasha Bedingfield’s Unwritten has stuck around off the back of its Saltburn bump (“No one else can speak the words on your lips”).

There’s also a rising newcomer in Chappell Roan, the alternative US pop star whose Good Luck, Babe! is shooting up the Top 40. It’s a song about loving a closeted woman who ultimately goes back to men, which nonetheless makes a universal statement about the unstoppable nature of desire: “You’d have to stop the world just to stop the feeling,” she sings. Moreover, she has a fantastical vision: a sort of regency rodeo prom queen; or Elizabeth I with a pig’s nose . As with the Last Dinner Party’s similarly baroque get-ups, it’s an invitation to fantasia that assumes no prior knowledge: just don some fancy dress and get stuck in. That sense also seems key to Beyoncé’s current incarnation: after the personal revelations of her 2013 self-titled album and 2016’s Lemonade, 2022’s Renaissance and this year’s Cowboy Carter mostly strip the specifics of her life from the lyrics to instead comfortably centre Beyoncé as a font of joyful genre play and invention. Tellingly, the one “Becky with the good hair” reference in Cowboy Carter’s Jolene rewrite stuck out for its tedious biographical retread.

None of this is to say that pop stars should avoid writing about their personal lives – far from it. But the most resonant pop steers between the two impulses. Charli XCX’s comeback single Von Dutch was clearly taunting someone – “it’s OK to just admit that you’re jealous of me” – but whoever the subject is pales in comparison to the way the song’s brazen grind makes you feel just as unfuckwithable as Charli. The Tortured Poets Department has a handful of moments like this. Guilty As Sin? may make its subject clear from the first line (no prizes for guessing which pop rogue’s favourite band is the Blue Nile) but Swift’s portrait of agonised fantasy over the forbidden while trapped in a stultifying relationship – and trapped in the societal expectations around it – resound with real emotional truth. The unfulfilled yearning is the album’s most convincingly sensual moment – a testament to leaving the picture incomplete.

In 2023, sales soared for popular brands like Poppi, which gained attention in 2018 after sealing a deal on "Shark Tank."

These carbonated drinks, which contain plant fibers that help good bacteria grow and thrive, claim to support things like gut health and blood-sugar regulation.

Still, I wanted to see if these sodas lived up to the hype. On a recent trip to my local supermarket, I bought all the Poppi prebiotic- soda flavors I could find.

Each 12-ounce can of soda contains under 25 calories, which is significantly less than what you'd find in the same-size serving of Coke or Fanta.

Here's my ranking of the flavors I tried , from worst to best.

Watermelon was easily my least favorite flavor.

Poppi's root beer was sweet and rich and had a familiar root-beer flavor. However, it lacked the spicy bite of the best root beers, and there was something almost yeasty in the aftertaste, which I thought was a little strange.

I've floated ice cream in worse, but I wouldn't choose this over a traditional root beer (or even its diet equivalent).

The grape-flavored Poppi was slightly tart.

Like many adults, I haven't had a grape soda in decades, but the familiar smell was unmistakable when I cracked open the can.

I don't think I've ever had a diet grape soda, but this tasted almost exactly how I would expect it to. It was slightly tart, which I don't remember experiencing when I had my last Fanta.

I liked Poppi's take on Dr. Pepper.

Diet Dr. Pepper is my caffeinated soda of choice, so I had high hopes for Poppi's Doc Pop.

It turned out to be pretty good, but I thought it tasted more like a cherry cola than a Dr. Pepper. However, this may have been the power of suggestion, as the bubbles on the side of the can looked a bit like cherries to me.

In my opinion, Poppi's classic cola was better than a Coke or Pepsi.

I really enjoyed the orange flavor.

Because I don't normally like orange soda, I didn't expect to enjoy Poppi's variety. After trying the grape flavor, I figured it'd be similarly candy-like.

However, the orange Poppi had a sharp, pleasant tartness that surprised me. It reminded me more of a Fresca than an Orange Crush — and, in my eyes, that's pretty high praise.

Poppi's ginger-lime soda was delicious and combined the strong, spicy flavor of ginger with the acidic, citrusy tang of lime.

It was light and refreshing, with no aftertaste to speak of. Unsurprisingly, it tasted like a Moscow Mule (and a pretty good one at that).
