Case study 1.

We know that each dish is usually made up of one or more ingredients, which we get from plants or animals. These ingredients contain some components that are needed by our body. These components are called nutrients. The major nutrients in our food are named carbohydrates, proteins, fats, vitamins and minerals. In addition, food contains dietary fibres and water which are also needed by our body.

With some simple methods we can test whether cooked food or a raw ingredient contains one or more of these nutrients. For carrying out these tests, you will need solutions of iodine, copper Sulphate and caustic soda. You will also need a few test tubes and a dropper. Try these tests on cooked food items as well as raw materials. If the required solutions are not available in readymade form, you can prepare them as given in the Table 1. There are many types of carbohydrates. The main carbohydrates found in our food are in the form of starch and sugars.

Case study 2

The tests for presence of carbohydrates, proteins and fats are simpler to do as compared to the tests for other nutrients. Let us begin by testing different food items to see if they contain carbohydrates. Take a small quantity of a food item or a raw ingredient. Put 2-3 drops of dilute Iodine solution on it. Observe if there is any change in the colour of the food item. A blue-black colour indicates that it contains starch.To test the presence of proteins in food we need to take a small quantity of a food item for testing. If the food you want to test is a solid, you first need to make a paste of it or powder it. Grind or mash a small quantity of the food item. Put some of this in a clean test tube, add 10 drops of water to it and shake the test tube. Now, using a dropper, add two drops of solution of copper sulphate and ten drops of solution of caustic soda to the test tube. Shake well and let the test tube stand for a few minutes. You will see that the contents of the test tube will turn violet. A violet colourindicates presence of proteins in thefood item.

For fats, take a small quantity of a food item.Wrap it in a piece of paper and crush it.Take care that the paper does not tear.Now, straighten the paper and observeit carefully. If you see an oily patch on paper,then it shows that the food item contains fat. The food items may sometimes contain a little water. Therefore, after you have rubbed an item on paper, let the paper dry for a while. If there were any water that may have come from food, it would dry up after some time. If no oily patch shows up after this, the food item does not contain any fat.

Vitamins help in protecting our body against diseases. Vitamins are of different kinds known by different names. Our body needs all types of vitamins in small quantities. Vitamin A keeps ourskin and eyes healthy. Vitamin C helpsbody to fight against many diseases.Vitamin D helps our body to use calcium for bones and teeth.

However, in a given raw material, one particular nutrient may be present in much larger quantity than in others. For example, rice has more carbohydrates than other nutrients. Thus, we say that rice is a “carbohydrate Rich” source of food.

Besides these nutrients, our body needs dietary fibres and water. Dietary fibres are also known as Roughage. Roughage is mainly provided by plant products in our foods. Whole grains and pulses, potatoes, fresh fruits and vegetables are main sources of roughage.

Such a diet is called a balanced diet.Pulses, groundnut, soyabean,Sprouted seeds (moong and BengalGram), fermented foods (South IndianFoods such as idlis), a combination ofFlours (missi roti, thepla made fromCereals and pulses), banana, spinach,Sattu, jaggery, available vegetables and other such foods provide many Nutrients.

Eating the right kind of food is not enough. It should also be cooked properly so that its nutrients are notlost. But there are some nutrients that get lost in the process of cooking and preparations. If the vegetables and fruits are washed after cutting or peeling them, it may result in the loss of some vitamins.

The skins of many vegetables and fruits contain vitamins and minerals. Similarly, repeated washing of rice and pulses may remove some vitamins and minerals present in them. We all know that cooking improves the taste of food and makes it easier to digest. At the same time, cooking also results in the loss of certain nutrients. Many useful proteins and considerable amounts of minerals are lost if excess water is used during cooking and is then thrown away. Vitamin C gets easily destroyed by heat during cooking.Also It can be very harmful for us to eat too much of fat rich foods and we may end up suffering from a condition called obesity.

Sometimes, we may not really have all this variety in our meals. If we are travelling, we may eat whatever is available on the way. It may not be possible for some of us, to eat such a variety of items, most of the time. There must be some reason though, why meals usually consist of such a distribution. → The components of food which are needed by our body is known as nutrient.

→ There are six main components present in food:

→ Carbohydrates are the compound which is made up of three elements:-

Carbon, Hydrogen and Oxygen

→ Carbohydrate provides energy to our body, which keeps it going throughout the day.

→ The main carbohydrates found in our food are in the form of sugars and starch. If food contains starch we can easily test it.

→ The sources of carbohydrates include cereals such as wheat, maize, rice, jawar, bajra, potatoes, bread etc.

→ We can test the presence of carbohydrates by iodine test.

Test for carbohydrates:

Step 1 : Take the food item in the test tube and add 2-3 drops of dilute iodine solution to it.

Step 2 : After some time if the colour changes to blue-black, it indicates the presence of starch in the food item.

→ Proteins are the complex compounds made up of carbon, hydrogen, oxygen, nitrogen and sulphur.

→ The sources of proteins are: cheese, egg, soya bean, pulses, meat etc.

→ Protein is known as body-building food.

Test for proteins:

Step 1 : Take food item in the test tube and Add 10 drops of water to it and mix well.

Step 2 : Now add 2 drops of copper sulphate and ten drops of caustic soda (sodium hydroxide) solution.

Step 3 : Mix it well and keep it undisturbed for some time.

Step 3 : After some time you observe the development of violet color in the test tube, it indicates the presence or the proteins.

→ Fat also provides energy to our body. Fat gives more energy as compared to carbohydrates.

→ Some sources of fat are oil, ghee, egg yolk, milk, butter etc.

Test for fats:

Step 1 : Take some food item in a paper and wrap it.

Step 2 : Then try to crush it taking care that the paper is not torn.

Step 3 : After that take out the food item and allow the paper to be dried for some time.

Step 4 : If you can find the oil spots on the paper it indicates the presence of fats in the food item.

→ Vitamins are a group of organic compound which is essential in small amounts for maintaining normal health and development.

→ Vitamins help in protecting our body against diseases. It helps in keeping our eyes, bones, teeth and gums healthy.

→ There are two types of vitamins some are fat soluble and some are water soluble.

→ Vitamins are of different types: - vitamin A, vitamin C, vitamin D, vitamin E, and vitamin K.

→ There are some other vitamins known as vitamin B complex which contain vitamin B 1 , vitamin B 2 , vitamin B 3 , vitamin B 5 , vitamin B 6 , vitamin B 7 , vitamin B 9  and vitamin B 12 .

Ans: Carbohydrates are sugar molecules made up of carbon, hydrogen and oxygen. carbohydrates are one of the main nutrients found in foods and drinks. They are a rich source of energy. Our body breaks down carbohydrates into glucose. There are two main types of carbohydrates i.e sugar and starch. Carbohydrates help to fuel the central nervous system and it provides energy for working muscles. Lack of energy and stamina are the two main symptoms associated with a deficiency of carbohydrates. The food rich in carbohydrates are potatoes, beans, yoghurt, oats etc.  

2. Explain in detail about proteins?

Ans: Proteins are highly complex substances that are present in all living organisms. Proteins are of great nutritional value and are directly involved in the chemical processes essential for life. They are an important component of food. They are needed for body growth and repair. Amino acids joined to form proteins. Proteins in the diet cause weakening of muscles. The deficiency of proteins leads to kwashiorkor and marasmus. The food rich in proteins is chicken, fish, milk, cheese etc.

3. Name any 3 vitamins, their sources and deficiency diseases caused by them?

Ans: The three vitamins are-

We know our food components consist of various elements, including carbohydrates, proteins, vitamins, minerals, etc. To have a healthy lifestyle, it is essential to have a balanced diet, including all these and not any one of them in particular. Tests for Components of Food Class 6 Important Questions 

There are many tests to understand the presence and amount of individual food components. 

Iodine Test : Iodine test is done for testing the presence of carbohydrates in any food item. Few drops of dilute iodine solution are dropped to the food sample whose carbohydrate content is tested. If the colour of the solution changes from its brown colour to a dark blue-black colour, we can infer that they contain carbohydrates. If the colour does not vary and remains the same, there would be no carbohydrate content.

Protein Test : Copper sulfate and caustic soda solutions are extensively used to test whether the protein is present or not in any food sample. The food sample to be tested is made into a paste, and the above solutions are mixed with it. It would change to a purple colour if it has protein, and in case it is absent in protein content, it may appear to be bluish.

Test for Fats: Testing a food sample for its fat content is more straightforward than another test. It does not require any chemical solutions and can be done simply with a piece of paper itself. The food to be tested is taken in a paper piece and is just crushed. If it shows oily patches in the form, we can infer that they contain fat.

We know that it is essential to have a balanced diet that includes all the vital components. But lack of certain nutrients may cause issues to our health. Diseases caused due to lack of intake of certain nutrients are called deficiency diseases. The best method to treat deficiency diseases is to have a healthy balanced diet. Let us look at some of the common deficiency diseases and their symptoms.

Deficiency in vitamin A causes night blindness. Since vitamin A is essential for the proper maintenance of skin and eyes, vitamin A deficiency results in low vision. Vitamin B1 deficiency causes a disease called Beri-Beri, whose symptoms include weight loss and weak muscles. Lack in vitamin C causes scurvy whose primary symptoms appear as bleeding gums. 

Vitamin D's weakness causes rickets, resulting in soft and tender bones with high chances of getting broken. Vitamin E deficiency causes Crohn's disease, where pale skin and rapid ageing are common symptoms. Lack of vitamin K causes haemorrhage. There would be excessive bleeding in such a condition, and clotting would be delayed.

Rather than vitamins, deficiency of minerals can also cause diseases. Lack of calcium leads to osteoporosis and osteomalacia where our bones are affected. For example, sugarcane, eggs, potatoes, soyabeans, green leafy vegetables are not too expensive and are good source of carbohydrates, fats, proteins, vitamins and minerals. If not very expensive food is taken in appropriate amount, it will act as a proper diet.

10. How can you detect the presence of proteins in a given food item?

Answer: The presence of proteins can be detected by the Biuret test. (i) Crush the food sample and put some of it into a clean test tube. Add some sodium hydroxide solution. (ii) Cork the test tube and shake it to mix the food with the sodium hydroxide solution. Then add a little copper sulphate solution. Cork and shake it again.

If the solution turns blue, there is no protein in the food. But if it turns violet, there is protein in the food.

11. What is anaemia? Explain.

Answer: If the quantity of iron is too less in a diet, one can suffer from deficiency disease called anaemia. Iron is essential for the formation of haemoglobin which is present in red blood corpuscles (RBCs) of the blood which is the oxygen carrier. Haemoglobin combines with oxygen and carries it to all parts of the body with blood circulation. Once haemoglobin synthesis is hampered, the oxygen carrying capacity of blood reduces, causing a condition called anaemia. Symptoms of iron deficiency are anaemia, fatigue, loss of appetite, pale skin, white nails, swelling of hands and feet.

On the other hand, nutritious food may not always be tasty to eat like, boiled vegetables, pulses, leafy vegetables etc., which are not always tasty but are very good for health. These foods contain important nutrients (proteins, vitamins, minerals etc.) which help us to maintain our body strong and healthy.

12. While using iodine in the laboratory, some drops of iodine fell on Paheli’s socks, and some fell on her teacher saree. The drops of iodine on the saree turned blue-black, while their colour did not change on the socks. What can be the possible reason? Solution:

The saree of Paheli’s teacher would have contained starch. When starch is exposed to iodine solution, starch turns into blue-black, so the saree also turned blue-black. Paheli’s socks would not have contained starch and thus did not show any colour change.

13. Paheli and Boojho peeled some potatoes and cut them into small pieces. They washed and boiled them in water. They threw away the excess water and fried them in oil adding salt and spices. Although the potato dish tasted very good, its nutrient value was less. Suggest a method of cooking potatoes that will not lower the nutrients in them. Solution:

Potatoes are nutritious vegetables that provide carbohydrates, vitamins (especially vitamin C), minerals and dietary fibre. Consuming potatoes along with their skin (peel) provides extra dietary fibre and nutrients.

A method of cooking potatoes that will not lower their nutrient value is:

Wash the potatoes and cut them into thin slices. Cook the potatoes with some water along with a little amount of oil and by adding salt and spices. Cover the cooking pot while cooking. This method helps to conserve the nutrients of potatoes.

14. Paheli avoids eating vegetables but likes to eat biscuits, noodles and white bread. She frequently complains of stomach ache and constipation. What are the food items that she should include in her diet to get rid of the problem? Give a reason for your answer. Solution:

Paheli should include whole grains, whole pulses, fresh fruits and vegetables in her diet to get rid of her problems. These food items contain roughage (dietary fiber) which is lacking in Paheli’s diet.

Paheli should avoid eating biscuits, noodles and white bread as they are made up of refined flour (Maida) which does not contain any roughage or fiber. Roughage prevents constipation.

15. (a) List all those components of food that provide nutrients. (b) Mention two components of food that do not provide nutrients. Solution:

(a) Components of food that provide nutrients are carbohydrates, fats, proteins, vitamins and minerals.

(b) Components of food that do not provide nutrients are water and roughage.

16. ‘Minerals and vitamins are needed in very small quantities by our body as compared to other components, yet, they are an important part of a balanced diet’. Explain the statement. Solution:

Minerals and vitamins are needed in very small quantities but are essential for the normal functioning of our body. Because

(i) They are protective foods which help in protecting our body against diseases.

(ii) They help in maintaining the normal growth of our body.

(iii) They provide good immunity levels, which leads to good health.

17. ‘Water does not provide nutrients, yet it is an important component of food’. Explain. Solution:

Water is an important component of our food because

(i) Water helps carry nutrients from food to all cells in our body and oxygen to the brain.

(ii) Water helps in flushing out toxins and wastes in the form of urine and sweat.

(iii) Water allows the body to absorb and assimilate vitamins, minerals etc.

(iv) Water helps to regulate body temperature.

18. Boojho was having difficulty in seeing things in dim light. The doctor tested his eyesight and prescribed a particular vitamin supplement. He also advised him to include a few food items in his diet. (a) Which deficiency disease is he suffering from? (b) Which food component may be lacking in his diet? (c) Suggest some food items that he should include in his diet. (any four) Solution:

(a) Boojho is suffering from night blindness which results in difficulty of seeing things in dim light.

(b) Deficiency of vitamin A causes night blindness. Hence vitamin A might be lacking in his diet.

(c) In his diet, Boojho can include food items such as carrot, spinach, papaya, milk, green leafy, vegetables, fish oil, etc. which are rich in vitamin A.
