Finding leaders

Founded in 1964 in the Chicago area and franchising since 2006, Rosati's Pizza has nearly 125 U.S. locations. Jay Rosati, who worked in the trucking brokerage industry after graduating college, saw that the family business had trouble identifying good franchise candidates as it grew.

In April 2023, Rosati formulated a plan to identify, train and incentivize the best workers the company could find. The idea of Rosati's University, which the company had laid out but never developed, became a reality. Initially, Rosati wanted to go to job fairs and colleges to recruit for the unique program, but his father, Rosati's Pizza's CEO, had other ideas.

"He told me I needed to go to high schools," Rosati says. He adds that it makes sense because the company is looking for young people who don't necessarily have experience or money but have a burning desire to build and succeed. The Rosati's University curriculum follows a basic, roughly four-year schedule.

Basic training

Like the military, Rosati's five-week "basic training " program teaches candidates to be ideal employees from the bottom up. It also allows the company and the candidate to feel each other out to see if there is a real fit. This paid training includes everything from order entry to order creation as candidates learn the key principles of working for the brand at one of Rosati's corporate stores.

"We run them through the wringer," Rosati says. "They go through every aspect of how it is to work at a Rosati's, 40 hours a week, one week at a time, to see where they're at."

Rosati's University

Following basic training, candidates enter Rosati's University , where they attend paid classes broken down into eight 12-week increments covering the fundamentals of business operations. The basic courses include accounting, operations and other business-focused classes. Candidates are paired with mentors and required to take an exam at the end of each 12-week unit to advance to the next.

"For the first six weeks, you're paired with someone like me, who gives you the knowledge and ability," Rosati says. "The next six, you will do it yourself, under supervision."

By the time candidates graduate from Rosati's University, they're expected to have a certain level of expertise, Rosati says. "We expect them to be a basic employee that can do anything in a store. We could call them in for a shift to fill any role, anywhere, and they can do it for the whole day, unsupervised."

As an added incentive, candidates receive a pay increase of $.25 per hour for every course they complete.

Management training

After successfully completing the initial two years of coursework, candidates begin an additional two years of management training. Although all facets of the training are important, management training is where candidates learn to run their own Rosati's Pizza franchise. During this part of the program, candidates work at corporate headquarters and learn high-level skills such as marketing, accounting and finance.

During this phase, candidates also work as assistant managers at a store under experienced general managers.

"We train them to be not just managers — hiring, firing, scheduling, making sure all the products are right," Rosati says, "but also owners — learning how to do labor reports, learning how to understand the finance and market research of your trade area, etc."

After completing the Rosati's University program, graduates are eligible for consideration for part ownership in a Rosati's franchise, using special financing provided by the company. This method allows the new owner to pay off their portion of the business while working and drawing a salary from their Rosati's location.

Rosati hopes that the enthusiasm he's seen so far continues — approximately 10 candidates are in various stages of the program despite it being less than a year old. Provided it keeps attracting the right candidates, he expects Rosati's University to continue growing — with the same end goal in mind.

"This is all leading towards them being a business owner," Rosati says. "So we're constantly reiterating that you're not just a pizza-maker, you're not just the general manager, you're going to be an owner."

Man ‘paid it forward’ at a pizza shop after a big order was never picked up

TOLEDO, Ohio ( WTVG /Gray News) - A pizza shop in Ohio was left holding the bag after someone failed to show up for a big order. The story made the rounds on social media, and it caught the eye of another small business owner.

What happened at PizzAroma in Maumee is a great example of how a simple act of kindness can have a profound impact.

PizzAroma has three locations. The Maumee store got a big order last week.

“A lady called and placed an order for 16 pizzas to be picked up the next day. The next day came, and she called right before the order was to be ready. We told her it’s in the oven, and then she never showed up,” Rocky Keefer, the manager said.

The 16 pizzas had to be thrown away, and the restaurant was left with an unpaid bill of $112.

“I can’t see why someone would do that to anybody, let alone a small business,” Keefer said.

Fast forward to this week, and the shop got another call for a big order. It was a man saying he wanted to pay for those 16 pizzas that were never picked up.

“I didn’t believe it at first. I was thinking, ‘Is someone trying to do it again?’ He said he wanted to pay on the phone, so then I knew it was not a scam. People like that, there aren’t many out there anymore. It was like an angel calling and saying, ‘I am going to help you out,’” Keefer said.

Travis Truesdell is the man who made that call. When he heard about what happened, he wanted to help. So he picked up the $112 unpaid tab for the original order and even bought two more pizzas.

“I have a lot of gratitude for people who have helped me out in similar situations where I was in need and they helped me with no strings attached. I was happy to be in a place to pay it back,” Truesdell said.

Truesdell is also a small business owner and an Army veteran. He said he even worked in a pizza shop when he was younger.

“Any time you can right a wrong, when you have the ability or luxury, why not do it?” Truesdell said.

So no matter how you slice it, this story is a great example of the power of reaching out when you can.

“Life is too short, and as much bad as there is going on in this world, why not do something good?” Truesdell said.

Keefer said Truesdell’s generosity didn’t end with the order. He said Truesdell also left a big tip for the staff.

There will be changes at PizzAroma because of what happened. Customers ordering 10 or more pizzas in advance will now have to pay upfront.

I had two meals at Zotman this trip. The firs was spaghetti and meat balls. The noddle were perfect, the sauce was very tasty and there were six to eight small meat ball that were also very good. The second meal was a small spinach,... mozzarella cheese, basil and mushroom pizza that was very good. More

Found this place some time ago. The Pizza is really good!!! And the burger is perfect! Atmosphere is good for family, stuff are kids friendly. Have some games and colorings.

This is his first Santa Clara County restaurant and one of his first franchise operations.

The eatery is located at the Village at San Antonio center. Like his other locations, this one will offer a fast-casual setting where customers can buy the artisanal New York, Detroit, Sicilian and Grandma style pizzas by the slice or whole pie. Pasta, salads, wings, meatballs, local microbrews and natural wine round out the offerings.

Franchisee Pritika Rajasanshi’s love of apricots and spice and the region’s orchard history inspired an exclusive pizza (slices only) for this location. Called Apricot Fields, the pizza is topped with Italian sausage, applewood-smoked bacon, mozzarella and ricotta cheeses, Blenheim Apricot Hot Honey Jam, red onion, Tony’s Hot Pepper Oil, pesto, Romano cheese, oregano and garlic oil.

“Tony and I went to high school together (Washington High School in Fremont),” Rajasanshi said in announcing the grand opening, “so to be opening a Slice House location in the Bay Area and working closely with the pizza legend himself, is truly full circle.”

The restaurant opens at 11 a.m. Saturday, with the first 50 customers in line receiving Slice House-branded merchandise (hats or dog bowls). From 2 to 4 p.m., Gemignani will welcome guests and sign copies of his cookbooks, “The Pizza Bible” and “The Pursuit of Pizza: Recipes from World Pizza Champions.”

This Slice House offers indoor seating for 34 and outdoor for 15.

Fremont native Gemignani, who mastered his pizza-tossing skills at Pyzano’s in Castro Valley, holds 13 world pizza champion titles. He launched the Slice Houses in San Francisco in 2010 and now owns 11 pizzerias in the Bay Area, Sacramento, Southern California, Las Vegas and beyond. This will be No. 12. And more franchises are coming to California and several other states.

He also owns Tony’s of North Beach, Tony’s Pizza Napoletana, Capo’s, Tony’s Coal-Fired Pizza and Pizza Rock.

The new range of Pizza Hut Melts is available in four other flavours: Pepperoni Lovers and Meat Lovers – both with a marinara dipping sauce – Buffalo Chicken, which comes with buffalo dipping and ranch dipping sauce, and Chicken Bacon Parmesan, offered with ranch dipping sauce. 

The new offerings are also available as part of the My Hut Box offer: a choice of Melts or a Personal Pan Pizza with two toppings, a side of either four boneless wings or fries, a 20oz beverage and a dipping sauce. 

My Hut Box offer is available for customers at a starting price of $6.99 in participating locations in the US.
