Today I want to share something very personal with you: my story

I’ve been wanting to tell the REAL story of how I started my cake business for a long time now. The true, raw, uncensored story.

Welcome to draft no. 3… I’ve written, deleted, rewritten and deleted multiple drafts of a chapter that very (VERY) few know.

Many who have been following my cake journey know me from the glossy details of being a cake blogger, Youtuber, Cake TV! instructor, award winning wedding cake designer, an online cake school business owner, winner of Threadcakes and international cake instructor… … BUT how I started couldn’t have been further from all of these things (which I’m immensely humbled and grateful for).

So, how did I start my cake business?

It starts in a hospital. Me, stuck in a hospital to be precise for over two long, sucky months fending off a sudden autoimmune condition that left doctors baffled. Prior to this, I had just wrapped up a Business degree at uni and was in the midst of clocking up some serious hours as a pastry chef in hopes of one day conquering the world of haute patisserie . ß So at the age of 24, I found myself quite suddenly caught in a whirlwind of medical complications, infections, MRIs, tests, seizures, memory loss, stroke, ICUs, operations .. you name it. Call out any medical division in a hospital and I can betcha a slice of tiramisu that at some point, I was there.

Like I said…sucky.

What I needed, was a miracle…

As things seemed to peak to a terrible crescendo, fervent prayers of my church, friends & family led to a sudden breakthrough when I was in ICU. I can’t quite explain it, but I know God healed me. In the deepest darkest time of my life, He was right there with me and walked me through it. And in the weeks that followed, I gradually inched my way to a full and complete recovery (!!!) without any lingering impairments or need for ongoing medication (can I get a ha-llelujah.. ?)

Once recovered, I was keen as beans to start LIVING again, and I thought that meant getting right back into my pastry job (prior to the whole hospital fiasco I was promised an awesome promotion which would see me designing new desserts for the large hospitality franchise I worked for). But fresh outta recovery, I was unexpectedly made redundant, which I suspect was a result of my bosses getting freaked out with my whole sicky-stroke-seizure-gross-weirdo fiasco. So yeah…MAJOR bummer.

Almost at exactly the same time, my then fiancé (now husband) lost his job too. Which meant we were planning a wedding and a life together without any money.

So here I was, post recovery, skinny, semi-balding (due to prior treatments), broke, jobless, living in a moth-infested rental… what was a girl to do?

I bounced between random jobs at the time to keep things afloat but I knew I needed to embark on a new career path. The only question was…what? Starting a business couldn’t have been further from my mind. What I needed was a safe, secure job which paid the bills and put some stability back into my life. I mean.. who on earth starts a business under such circumstances?!?

Cue random phone call from a friend one day…

“Hey, do you make those pretty colourful cakes? The ones with the sugary figurines..?”

(Internal voice: err…no) Oh, why you asking?

“It’s our anniversary and I just thought to ask if you would make one for us, we’re happy to pay”,

(Internal voice: Hrm…I’m a pastry chef, how hard will it be to figure it out.. I wonder what that sugary stuff is called..) Yeah sure!

So that night, I taught myself how to make the “sugary stuff” (which I later found out was called fondant), then proceeded to cover & decorate a novelty cake for the first time and *cue confetti drop*…

My first sale was born. Cha-ching!

(Yes, I know, I know… I had broken all the cardinal rules for properly starting a Cake Business and very simply, fell into it. We’ll talk about THAT in the very near future). But broken rules aside, something had gone off inside me.

A spark was lit and I was bewildered to realise how much I enjoyed making a handcrafted, meticulously designed cake AND selling it to someone who appreciated and loved it so much.

It was a no brainer for me.

I realised didn’t JUST want a job for job’s sake. I didn’t want to work for (or have my future reliant on) under-appreciative bosses. I didn’t want to spend a majority of my life doing something I didn’t remotely enjoy.

I wanted to create. I wanted to bake. I wanted to be a #girlboss (cause c’mon, that just sounds way cool). And call me immature, but I wanted to work at home in my pyjamas everyday!

So the decision was made and I went for it. I had set myself a steep learning curve but I was determined to make it work because I thought “if others can successfully carve out a career out of this, then I can too”.

Which leads me to share a few very important core mantras that saw me through the rough patches of my caking odyssey:

There’s always room at the top 

The fact that there seems to be many, many others more successful than you, doesn’t mean there isn’t space for you to succeed too. No industry ever says “Nope, we’ve got enough gifted, influential people here. Please try somewhere else”. There is opportunity and space for each one of us to come out tops in our chosen field of work.

You have to faith it till you make it

In the lyrics of the rock band Journey (or Glee if you’re a millennial) … Don’t stop believing! It’s actually possible to make a career out of something you love. I’m living proof! When the doubts or fears hit, you just have to “faith it” and move forwards.

Success is an iceberg

Err…where you going with this Amanda? Hear me out. It’s a metaphor. People only see the tip of the iceberg (success) however the REAL bulk of the iceberg is underwater and goes completely unseen. That’s majority volume represents the hard work, focus, learning, grit & persistence that is required to form that wondrous, icy tip. Success doesn’t come by luck, accident or ease. It costs us something.

Healthy builders are Happy Builders

In the pursuit of “greater things”, don’t neglect your health, wellbeing or families. Yes, sacrifices are sometimes necessary – but be wise. My husband & I have shifted responsibilities depending on the different seasons of my business. Unavoidable sleepless nights should be followed by some proper form of recuperation, and if I’m feeling stressed or pressured, I always open up to someone for help.  You cannot be your most effective self if you’re not looking after YOU (body, soul, mind) & your family.

Rome wasn’t built in a day

And neither is a cake empire. Give it time. Build it every day. Keep laying those bricks and eventually, you’ll look back and see how far you’ve travelled.

The reality is that it wasn’t smooth sailing all the way when I first started my business. Far from it… every win would be followed by a loss and it was a constant “two steps forward, one step back” situation. I was a no-name cake decorator trying to make it in an endless sea of talent. It was H.A.R.D and at one stage, I very nearly threw in the towel and quit my business completely (I’ll be talking about THAT in a future blog post).

I remember times where I’d quietly cry in bed after a night out with friends having just learnt of their shiny new jobs or promotions, whilst I had only managed a $50 profit that week. I recall being so consumed with self-doubt as I was constantly comparing myself to other cake decorators (I share more about How I overcame Caker Comparison in an older post). I also remember the many occasions I’d have to forgo sleep on a Friday night just to remake a cake or fix a topper that fell apart (due to my shoddy skill level).

Nonetheless, I could see very clearly where I WAS, and where I WANTED TO BE.

So I determined in my heart to keep chipping away at the dream until it became a reality. I invested in courses and classes and got skilled. I practiced, perfected and honed my craft. I pored over my business textbooks. I then started a strategic plan of developing myself to become the cake decorator I KNEW I could be (if you’re interested, you can read more about How I Accelerated My Cake Skills in One Year ).

The truth is, I’ve never stopped chipping away. And I think, I never ever will. 

But today as I share my story, I’m taking a sneaky peek behind my shoulder and seeing that indeed, I’ve come very, very far and am living out the career I had wished for way back when I first made that “sugary stuff”. I get to make pretty cakes, work every day as a creative entrepreneur, teach passionate like-minded bakers & connect with incredible people from all over the globe.

And I get to do it all in my pyjamas.

If you’re telling yourself defeating things like having a dream is for other people but not you, or that others have a better shot at it than you do, or if life’s throwing you some serious punches… Then I hope my story helps encourage you that dreams ARE achievable and they are doable. I’m living proof.

As the only boy with five sisters, it wasn’t common that I was attracted to the kitchen. I didn’t particularly enjoy cooking except for when I am doing the steaks with my dad. However, there is just one part of cooking that I am attracted to, baking .

Growing up, I used to love cakes. I would cry for hours unending until my parents got me a piece. I was so addicted to chocolate cake, and my mum used it against me. She would tell me to do the dishes, fold my laundry, or even water the garden for a piece of chocolate cake.

I would gladly do all that and more to get my piece, and my mum is great at baking. Her cake is always near perfect, and she knows how to spice them up with fruits and other sweet additives. Watching her bake in the kitchen at special occasions like Christmas, birthdays and Thanksgiving brought me so much happiness. While some of my sisters didn’t like the idea of baking, I was glued to my mum whenever she baked and asked her many questions about the process then, although some of them were annoying.

As a little boy of seven, I could attempt to bake a simple carrot cake. My love for the chocolate was, and carrot cake became my new cool. On my 10th year, I baked my first cheesecake for the family and got plenty of positive feedback from my mum, sisters, and my dad too.

As I grew, my interest in cake decorations intensified. I would go to parties and carefully observe the decorations on the cakes. Then, I would come home and ask my mum what she thought about it. I got my first camera and took tons of cake pictures I found interesting. As my curiosity grew, my family adopted the idea that I was the chief baker. I took up that position with so much joy as I looked forward to pleasing them. I baked all kinds of easy cakes for deserts. I bought cookbooks and learned new ways to make a great cake without fuss.

From cakes to pies and delicious bread, my love for baking grew with me to my teens until I had to get to college. My mum was crying because since I took over the baking responsibility, she has been free and had not baked for years. My family was sad, but I was devastated because I may have to focus on my studies and lose my passion for baking.

Dad didn’t want me to go into the confectionary business without at least getting a professional certificate, and I correctly understood his plight. I got to college, and my first year was hectic, so I had no time for my hobbies, especially baking. I made new friends and found some that lived around. Made a few visits and found out one of my close friends lives with his family and they were open to my visits.

One day we were all having dinner, and I talked about my baking expertise and how I missed doing what I love most. The family suggested I come around and bake for an upcoming birthday. I was so excited to get another opportunity to display my talent.  I showed up very early on the day before the celebration and got down to work with the help of my friend’s family. They were skeptical at first because I was a boy, but when we were halfway into the process, they were amazed at my knowledge and skills on baking. 

The cake turned out better than they expected, to my amazement. I did a unique decoration, and the celebrant never stopped thanking me. I got a few recommendations and did other side baking gigs while in college, and I was happy with the chance I got.

Baking was my way of relaxing. I loved the smile and people’s faces when they taste my cake or pie, and it gave me a strong push to come up with something better. I loved the compliments I get from mum and dad anytime I bake something extraordinary. They were proud I found something I love and could keep to it. 

Each time I bake, I feel a spark of joy in my soul. It felt like I was born to mix flour and make magic from it. I have other hobbies, no doubt, but none can compare to my love for baking. 

At the end of college, I took to another profession but will always bake whenever I got the chance. Baking will always be special to me, and I hope to pass down my skills to my children.

Every night I dream of living a life of a celebrity. In my dream I see myself dressed up like a model posing for cameras. It is my dream to work in the film industry and become famous. But, for that, I will have to work really hard. My mother always tells me to concentrate on studies and live up to the dream of becoming a model. My father also supports me and he says that he believes in me. Once he told me that I should help others and be in good books of the people to win their heart as it will help me make my dream come true.

Business is something that has always intrigued me. As my father is a businessman, since childhood, I had this keen interest to be a part of or to lead a business.

Only having a dream won’t help, I also need to work towards the achievement of my dream. As doing business is not as easy as it seems, first I need to understand the basics of what business actually is. This will the first step towards my dream. So after completing my intermediary, I have enrolled myself in a reputed college to do my Bachelors in Business Administration (BBA). After completing BBA, I will also do my Masters in Business Administration. By then I will have gained the complete knowledge on business and its functioning which will help me reach my dream.

Apart from the theoretical part, I can always count on my father to share with me the practical experiences and advices that will help me shape my dream. This will take me closer to my dream of becoming a successful businessman. I have also started reading magazines about successful businessmen and their success stories in order to gain some idea that will help me in the long. I will put the best of my efforts and work hard towards achieving my dream.

Introduction:

My dream to become a Soldier started on an Army Day (January 15th), when I was still in High School. I witnessed the tribute paid to martyred soldiers at the Amar Jawan Jyoti in India Gate. I began to understand the values that inspire a Soldier to willingly face challenges and responsibly safeguard the nation even at the cost of his own life. This inspired me to study well and keep myself fit to achieve my dream to become a Soldier.

Training of a Soldier:

I also understood about the training before service. The feeling of pride and mutual loyalty is imbibed among the trainees. They are also trained to willing sacrifice for the country’s honour, with a do or die spirit. A sense of fearlessness, fairness and honesty are inculcated during the disciplined training. These components further kindled my dream to become a Soldier.

Lifestyle of a Soldier:

On the one hand, the soldier’s life is a life of self-sacrifice. On the other hand, the lifestyle it offers far exceeds my expectation, and fuels my dream to become a Soldier. Opportunities to advance in ranks, paid study holidays, subsidized housing, free medical coverage and recreational facilities are provided, apart from regular salary and perks. Lifelong pension is awarded after retirement.

When I was a kid, my dream was to become a doctor. But during my growing age, the Bollywood industry fascinated me and then my dream of becoming doctor changed to an actor. When I passed my class 12 th , the only goal that hit my mind was becoming an engineer. I always fear of dreaming about big things, but if you have potential then, you can achieve anything in life.

Dream and Fear of Health and Fitness:

When I was young, I was not so much concerned about my health. But now I realized the importance of having good health. My dream of becoming fit and healthy was only achieved due to strong willpower and eagerness of doing regular exercise. With this thought, I managed to lose around 15 kg easily. Now, I don’t fear about eating any food as I compensate that with my daily workout.

How my dream life looks like:

Socially, I have always imagined myself being a very influential person in my society. Currently in school, I always have the urge to influence someone but I still lack the confidence and resources to do so. I have always wanted to travel the world and explore different cultures of the world through interactions with people. I also imagine of having a great family with whom I can travel the world with.

Career-wise, I want to work at the comfort of my own home and be flexible so that I can always have time for my family. Spiritually, I have a desire to always be in good terms with God and follow the doctrines of my religion.

Economically, I want to be self-actualized at an early age so that I can focus on my influential personality, having all the resources I need. I want to be satisfied with what I will have achieved and work on living a happy life.

How I plan on living my dream life?

Living the dream life can begin any time that you chose to be as an individual. For my dream life, the things that I can achieve while still at school is the ability to have a spiritual wellness and flowing the doctrines of my religion. I can also start learning to appreciate whatever I have and living a happy life.

For the desires that I cannot achieve at the moment, I will work towards achieving them by shaping and redirecting the pathway. For example, my career, I will pursue something in the university that will allow me to work from home without necessarily going to work.

A dream life is basically the desired of one’s heart inform of an imagination. A dream life does not affect the reality in any way.

With this perfection I will start my own clinic and serve people for the rest of my life along with this I will help other students also to get trained to become a good doctor. I know becoming a world class chef is not very easy and can only happen if complete and proper training from a very reputable institute and there isn’t much I can do at the moment to speed up the realisation of my dream since I am still in school. However, I still do my best to set my dream rolling, I follow a lot of cooking websites and blogs, watch cooking shows, read culinary books and I practice my cooking to sharpen my skills every time. These are all little steps I am taking towards achieving my dream. Though my goal is to become a world class chef, I have small goals in place for each month and year to come so that I can reach my dream.

A major hindrance to achieving my set goals and my dream is the lack of inadequacy of motivation. A lot of people have given up their goals and dreams just because they got tired on the way. It is extremely important to remain motivated and only stop is when the dream has been achieved. Highlighted below are some useful tips that I have used to keep myself motivated on the journey to reaching my dream:

i. Anytime I see that I am running out of drive and energy and I am becoming too tired to stick to my set goals, I try to remind myself of what my dream is and the feeling of pride and joy I will experience when I achieve it and become a world class chef. It feels like pressing a reset button and starting with a refreshed mind again and working harder towards achieving my dream.

ii. Long term goals and short term goals are set towards the ultimate goal of achieving my dream and as I reach these short term goals, I try to reward myself for my achievement. The reward can vary from eating dinner at my favourite restaurant or buying myself a new phone I wanted or going out with my friends. Rewarding myself is a very good way to remain motivated towards the achievements of my goals and ultimately my dream.

iii. When I work too much and have no time to relax and play, my productivity drops and I become dull. Therefore, it is a good idea to have some time for myself away from work to focus on something fun that I love. I find time in my schedule every day to engage in some form of leisure activity or sport.

iv. Having people who believes in my dream and support my goals around me makes all the difference. Having positive people helps me find the strength and courage to push on and not give up on my dream. They motivate me to work hard and do the best to achieve my goals and my dream.

v. A mistake is nothing more than an experience and an opportunity to try again and do things much better. So, instead of getting heartbroken and disheartened to the point of wanting to give up on my goals and dream when I face a tough time or make mistakes, I learn from the mistakes and move on as the tough times and mistakes make me a lot stronger.

I will keep working hard towards achieving my dream and I believe that I will become a world class chef one day.

By keeping a check on your surroundings and providing proper information to the police in case you notice an unfavourable incident is also a form of your contribution to the security agencies of the country. If everyone remains active, a lot many incidents such as terrorist attacks can be averted.

The Unique Burial of a Child of Early Scythian Time at the Cemetery of Saryg-Bulun (Tuva)

In 1988, the Tuvan Archaeological Expedition (led by M. E. Kilunovskaya and V. A. Semenov) discovered a unique burial of the early Iron Age at Saryg-Bulun in Central Tuva. There are two burial mounds of the Aldy-Bel culture dated by 7th century BC. Within the barrows, which adjoined one another, forming a figure-of-eight, there were discovered 7 burials, from which a representative collection of artifacts was recovered. Burial 5 was the most unique, it was found in a coffin made of a larch trunk, with a tightly closed lid. Due to the preservative properties of larch and lack of air access, the coffin contained a well-preserved mummy of a child with an accompanying set of grave goods. The interred individual retained the skin on his face and had a leather headdress painted with red pigment and a coat, sewn from jerboa fur. The coat was belted with a leather belt with bronze ornaments and buckles. Besides that, a leather quiver with arrows with the shafts decorated with painted ornaments, fully preserved battle pick and a bow were buried in the coffin. Unexpectedly, the full-genomic analysis, showed that the individual was female. This fact opens a new aspect in the study of the social history of the Scythian society and perhaps brings us back to the myth of the Amazons, discussed by Herodotus. Of course, this discovery is unique in its preservation for the Scythian culture of Tuva and requires careful study and conservation.

The center of Balashikha is 6 km from the Moscow ring road. Gorkovskoe highway M7, Shchelkovskoe highway A103 and Nosovikhinskoe highway pass through the city.

There are 16 city bus routes and fixed-route taxis in Balashikha. Suburban routes connect Balashikha with the nearest metro stations and with the cities of Zheleznodorozhny and Reutov. Transit suburban routes follow from Moscow to settlements in neighboring districts of the Moscow region.

Savvino-Storozhevsky Monastery and Museum

Zvenigorod's most famous sight is the Savvino-Storozhevsky Monastery, which was founded in 1398 by the monk Savva from the Troitse-Sergieva Lavra, at the invitation and with the support of Prince Yury Dmitrievich of Zvenigorod. Savva was later canonised as St Sabbas (Savva) of Storozhev. The monastery late flourished under the reign of Tsar Alexis, who chose the monastery as his family church and often went on pilgrimage there and made lots of donations to it. Most of the monastery’s buildings date from this time. The monastery is heavily fortified with thick walls and six towers, the most impressive of which is the Krasny Tower which also serves as the eastern entrance. The monastery was closed in 1918 and only reopened in 1995. In 1998 Patriarch Alexius II took part in a service to return the relics of St Sabbas to the monastery. Today the monastery has the status of a stauropegic monastery, which is second in status to a lavra. In addition to being a working monastery, it also holds the Zvenigorod Historical, Architectural and Art Museum.

Belfry and Neighbouring Churches

Located near the main entrance is the monastery's belfry which is perhaps the calling card of the monastery due to its uniqueness. It was built in the 1650s and the St Sergius of Radonezh’s Church was opened on the middle tier in the mid-17th century, although it was originally dedicated to the Trinity. The belfry's 35-tonne Great Bladgovestny Bell fell in 1941 and was only restored and returned in 2003. Attached to the belfry is a large refectory and the Transfiguration Church, both of which were built on the orders of Tsar Alexis in the 1650s.

To the left of the belfry is another, smaller, refectory which is attached to the Trinity Gate-Church, which was also constructed in the 1650s on the orders of Tsar Alexis who made it his own family church. The church is elaborately decorated with colourful trims and underneath the archway is a beautiful 19th century fresco.

Nativity of Virgin Mary Cathedral

The Nativity of Virgin Mary Cathedral is the oldest building in the monastery and among the oldest buildings in the Moscow Region. It was built between 1404 and 1405 during the lifetime of St Sabbas and using the funds of Prince Yury of Zvenigorod. The white-stone cathedral is a standard four-pillar design with a single golden dome. After the death of St Sabbas he was interred in the cathedral and a new altar dedicated to him was added.

Under the reign of Tsar Alexis the cathedral was decorated with frescoes by Stepan Ryazanets, some of which remain today. Tsar Alexis also presented the cathedral with a five-tier iconostasis, the top row of icons have been preserved.

Tsaritsa's Chambers

The Nativity of Virgin Mary Cathedral is located between the Tsaritsa's Chambers of the left and the Palace of Tsar Alexis on the right. The Tsaritsa's Chambers were built in the mid-17th century for the wife of Tsar Alexey - Tsaritsa Maria Ilinichna Miloskavskaya. The design of the building is influenced by the ancient Russian architectural style. Is prettier than the Tsar's chambers opposite, being red in colour with elaborately decorated window frames and entrance.

At present the Tsaritsa's Chambers houses the Zvenigorod Historical, Architectural and Art Museum. Among its displays is an accurate recreation of the interior of a noble lady's chambers including furniture, decorations and a decorated tiled oven, and an exhibition on the history of Zvenigorod and the monastery.

The Palace of Tsar Alexis was built in the 1650s and is now one of the best surviving examples of non-religious architecture of that era. It was built especially for Tsar Alexis who often visited the monastery on religious pilgrimages. Its most striking feature is its pretty row of nine chimney spouts which resemble towers.
